Chewy Gluten-Free Peanut Butter Cookies
If you like Chewy Peanut Butter Cookies and want to avoid gluten and dairy, you might have a new favorite with these!Around Christmas time we first gave you this basic recipe. They contain neither wheat nor dairy. They are made with only 5 ingredients and take 12 minutes and done!
The difference between these and the original recipe are 2 things. We substituted brown sugar for regular white sugar and added a bit of salt. The brown sugar produces a chewier cookie and the addition of salt makes for a more complex flavor. Either way, they are the easiest and some of the most delicious cookies you will ever eat!
Chewy Gluten Free Peanut Butter Cookies
2 cups (16oz. jar ) chunky peanut butter*
2 cups brown sugar
2 eggs
2 teaspoons vanilla
1/2 teaspoon salt
Mix all ingredients together until they form a dough that sticks together. This will take about 1 minute of mixing. Take a walnut sized chunk of dough and roll into a ball. Roll dough ball in white sugar…this is optional but is a nice addition.
Using a fork, flatten cookies and make a crisscross pattern on cookies. Bake in a 350 degree oven for 12 minutes. (This is 4 minutes longer than you bake the original recipe because the brown sugar adds more moisture and needs a longer baking time.) Cool slightly on baking sheet then move to a wire rack to finish cooling while you bake the rest of the cookies. Pour a glass of cold milk and enjoy!
*(use an all natural “peanut only” brand like Smuckers)
