Cheesey Goodness

The Greeks call this Tiropita, the Armenians call them Cheese Boregs. But you …. will just call them delicious!

These are simple to make and can be frozen and then baked as you need them.  They are perfect with a Mediterranean meal or as appetizers at a cocktail party.  They would also be great as an appetizer at your upcoming SuperBowl or Oscar night gathering.  Both children and adults love them, which makes these perfect for any family meal or event.  Make some soon for any reason or occasion.  You’ll be glad you did.

Tiropita / Cheese Boregs 

Fillo Dough (thawed)
1 cup butter, melted
1/4 cup crumbled feta cheese
1/4 cup grated parmesan cheese
1/2 pound shredded whole milk mozzerella cheese or Monterey Jack cheese
1 pound whole milk ricotta cheese
2 eggs
1/2 teaspoon salt
2 tablespoons chopped parsley

Stir together cheeses, eggs, salt and parsley.  Brush a sheet of fillo dough with butter.  Top with a second sheet of fill dough also brushed with melted butter.*  Cut fillo into 3 inch wide strips.  Place a heaping spoonful of cheese mixture on the end of each strip.  Fold the corner of strip over to form a triangle.  Continue folding up and over as you would a flag forming a triangle of dough around the cheese filling as you go.  Follow here in the photos below.

*(While you are cutting and filling the sheets of fillo dough be sure to keep the sheets you are not yet using covered with a damp towel as they are so thin and delicate they will quickly dry out and become crumbly, making them impossible to work with)

Place the triangles of cheese goodness on a baking sheet as is pictured here.  You can now cover them with waxed paper and place them the freezer.  Once they are thoroughly frozen remove them from the baking sheet and place them in a ziplock freezer bag  this way you can keep them frozen until you want to use them and remove as many at a time as you need.  OR you can bake them at 350 for about 15 minutes or until golden brown and crisp.

They take a little time to make but because of all the folding.  But they are not difficult and they are well worth the effort.  This recipe will make 30 good sized tiropita or boregs.  Sounds like a lot, but you will be surprised how fast they disappear.  The smiles on the faces of those who enjoy them, however, will last a good while! 🙂
