Buttery Potato Stacks
If you are anything like your Two Chums, we had you at the word “buttery”. Add that to potato and whatever it is has to be delicious! That is what we think of these yummy things. They are the perfect accompaniment to any meat dish and even yummy alongside eggs. No matter what you put them with we know you will enjoy these buttery potato stacks 🙂
Buttery Potato Stacks
This is not so much a recipe as a method of preparing potatoes. These are basically a form of individual au gratin potatoes. Here is what you need for the basic “stack”:
Potato, peeled and sliced very thinly
Butter, melted
Salt and pepper
Fresh thyme leaves
Garlic (optional)
Parmesan cheese
Chicken Stock
Drizzle the potato slices generously with melted butter. The amount will depend on how many potatoes you are using and how many stacks you are making but be generous and use more than you think you will need. You can never have too much butter, right?
Sprinkle with salt and pepper and garlic, if you are using it, and add a generous handful of grated parmesan cheese. Add the fresh thyme leaves and mix together using your hands.
Generously butter the muffin cups. Stack potato slices in muffin cups and sprinkle fresh thyme leaves over the top. Pour enough chicken stock into each cup to fill.
Bake at 400 degrees for about 30 minutes or until potatoes are golden brown and edges are crispy. Run a small knife around each stack and using a small spatula or fork lift each stack and remove from muffin cups. Serve right away or place on serving dish and keep warm in a 250 degree oven until ready to serve. Add a few more sprinkles of fresh thyme leaves and….Bon Appetite!
