Broccoli Cheddar Soup

Broccoli Cheddar Soup
This is so easy to make and even easier to eat. Get some good French or sourdough bread and you’ve got a delicious meal for lunch or dinner.
Melt butter in a large pan over medium heat and add onion and garlic. Stir until the onions look transparent, about 3-4 minutes. Add in flour and stir continuously for about 2 minutes to allow the flour to “cook” and lose that raw flour taste. Next add in salt, pepper and garlic powder and stir to combine. Pour in the chicken broth and stir. Add broccoli (be sure the broccoli is finely chopped, keeping a few bigger pieces if you prefer to have some chunks of broccoli in your soup ) and add the shredded carrots. Cook for about 10 minutes to allow the broccoli and carrots to be fully cooked and soft. Add in the cream and stir to combine. Bring the soup back to the temperature the soup was before you added the cold heavy cream so the cheese will melt and then add the cheddar cheese. (We would recommend to shred or grate your own cheese as the cheese in packages that comes already grated has cellulose or other non sticking agent added to keep the cheese from sticking together and this may effect the taste and consistency of the soup). Stir to thoroughly combine the cheese and your soup is ready to serve and enjoy.
