Broccoli Beef
Marinade:
1/2 lb.flank steak, cut into 1/4″ strips
1 tablespoon oyster sauce (you can buy this in the Asian section of your favorite supermarket)
1/4 teaspoon baking soda
1 tablespoon cornstarch
1/2 teaspoon salt
2 tablespoons safflower oil (or other neutral oil)
Sauce:
2 tablespoons soy sauce (you can use gluten free tamari soy sauce also found in the Asian section of your market)
1 tablespoon oyster sauce
1/2 white pepper (substitute black pepper if you can’t find white pepper)
1 tablespoon sugar or honey
1 teaspoon sesame oil (in the Asian section of the market)
3/4 cup chicken stock
2 cups broccoli florets
2 cloves chopped garlic
1 tablespoon finely chopped fresh ginger
1 1/2 tablespoons cornstarch mixed with 1 1 /2 tablespoons water to form a slurry to thicken the sauce
Slice the beef in 1/4″ strips being sure to cut it against the grain to keep the beef tender. Mix with the oyster sauce, oil, cornstarch, salt and baking soda and allow to sit for 15-30 minutes.
Mix the sauce ingredients together and set them aside. It helps to heat the chicken stock first to dissolve the sugar, then add all ingredients together.
Cook the broccoli in boiling water for 30 seconds then drain and set aside. (Alternatively, microwave the broccoli for 1 minute then side aside.)
Add about 1/4 cup of oil to a hot wok, or deep frying pan, and sear your beef over high heat for 2-3 minutes. Remove the beef and set aside.
Next in the remaining oil in the pan, fry the ginger and garlic for a few seconds moving it constantly so it doesn’t stick to the pan or become blackened. Then add the sauce you mixed, bring it to a boil and allow it to reduce slightly. Add in the cornstarch slurry to thicken the sauce. Next add in the beef and broccoli and stir to coat in the sauce. Serve immediately over steamy white rice…YUM!!!
