Spiced Fig Jam
(From Plates to Share by Jennifer Joyce)

4 oz. dried ready to eat figs
2 Tablespoons olive oil
1 small red onion, diced
freshly squeezed juice and zest of 1 lemon
1/4 cup sherry vinegar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cumin seeds
1/2 teaspoon cayenne pepper
5 Tablespoons super fine sugar
sea salt and freshly ground black pepper

Pour 1 cup boiling water over the figs and let them sit for 10 minutes.  Drain in a colander (reserving the soaking liquid) and when cool enough to handle, chop them and set aside.  Put the olive oil in a large skillet and add the onion.   Sauté for about 5 minutes, until soft.  Add the spices and season with salt and pepper.  Add the figs, soaking liquid, vinegar, sugar, lemon juice and zest, and simmer for about 30 minutes, until the mixture is the consistency of jam.  When cool, spoon into a sterilized, resealable jar.  The jam will keep for up to a month refrigerated.  Serve with toasted bread spread with blue cheese.  Add a slice of pear if desired.

Herbed Cream Cheese Cucumber Sandwiches

Toasted white bread
thin slices of cucumber
dill weed
8 oz cream cheese
1/2 cup mayonnaise
1 pkg dry Good Seasons Italian Dressing

Mix together cream cheese, mayo and Good Seasons.  Refrigerate for 2 hours or overnight to let flavors develop.   Trim the crusts from slices of good white bread and cut into triangles.  Butter and toast them, allow to cool.  Spread the toast with herbed cream cheese and top with thin slices of cucumber.  Sprinkle with dill weed.

Prosciutto with Fresh Mozzarella and Browned Sage Butter

Slices of toasted French bread
Thin slices of prosciutto
Fresh mozzarella sliced
Fresh sage leaves sautéed in butter

Melt butter in a pan add fresh sage leaves.  Cook until leaves are crispy and butter begins to brown.
Top the bread with prosciutto and then cheese.  Bake in a 375 degree oven until cheese begins to melt.
Remove from oven and pour browned butter over sandwiches.  Add crispy sage leaves on top and serve immediately.

Those cream cheese and dill appetizers came from Uncle Randy (Lulu’s little son). Someone at his office made them for a party and they were such a hit he brought them to my house and they were a hit there too. You’ll have to try them. Super easy and lots of flavor!
