Angel Pie
You will be hard pressed to find a lighter, more lemony dessert. If you are a lemon fan, this is the pie for you! This is such a yummy pie we think it earned its name for a couple of reasons: 1) it is so light it is like an angel and
2) anyone you serve it to will believe YOU are an angel for making it!
If you like lemon you have to give this one a try. And the bonus?…. It’s gluten-free 🙂
Angel Pie
1 meringue for crust
1 recipe lemon curd
3 cups whipping cream
1/3 cup sugar
1/2 teaspoon lemon extract
Make the meringue for the crust. While meringue is cooling, make lemon curd and refrigerate to cool completely.
When meringue is ready and lemon curd is fully cooled, whip the cream with sugar and lemon extract. Carefully fold in 1/3 of the whipped cream into the lemon curd. Then turn this mixture into the meringue crust.
Add remaining whipped cream to top of pie
Now slice and enjoy!
