All Hail Caesar
The Caesar salad, that is…
As you may or may not know this most popular of all salads was originated in Tijuana, Mexico at the Hotel Caesar, by Chef Caesar Cardini about 100 years ago. While today the lettuce is usually chopped, the original version called for whole leaves of romaine lettuce which were meant to be picked with the diner’s fingers and eaten. One other distinction of the original recipe from how we usually know it today, is that it called for fresh lime juice. As the salad made it’s way north to the U.S., lemon juice was substituted for the original lime juice. If you make it this weekend, try it with the lime juice. And why not give this classic salad a try this weekend? It has stood the test of time and is as popular today, or maybe even more so, as it was in the 1920’s. Bon Appetit!
