A New Hannukah Potato

Tonight begins the 8 day Jewish Festival of Lights known as Hanukkah. One of the iconic dishes served during Hanukkah is latkes. If you are unfamiliar they are a sort of hash brown potato meets a potato pancake….yummy. or at least we think so but it turns out not everyone loves them…not even all Jews apparently. So these potato cakes are an alternative. And tasty one too!

Though these are not traditional they are fried which ,makes them perfect for Hanukkah. Fried food is a hallmark of Hanukkah meals as the celebration revolves around the story of the miracle of oil lamps staying lit long after they should have burned out.

These potato cakes from HungyHappens.net are usually filled with cheese. That works unless you are keeping kosher and/or serving meat at your Hanukkah meal, then dairy can’t be eaten with meat. Solution? Make them without cheese or serve them as a snack without meat. Of course if you aren’t Jewish you can eat them anytime with anything you like and we would suggest you do. šŸ™‚
