A Good Egg

IMG_5449We have attempted in the past to give you some ideas about the best way to boil an egg.  Now we actually have THE BEST way!There are probably as many ways to boil an egg as there are people you ask about it.  But the truth is, sometimes no matter what method you use, the egg itself may be cooked well, but it is impossible to peel.  The shell sticks to the white or the membrane that surrounds the white, and what you can end up with is a hard boiled egg (or even a soft boiled one) that has chunks of white missing as they are stuck to the shell.   They may taste ok, but they are not so good looking.

But we have found a way to change that.  It wasn’t our brilliant idea, just one of many we have come across with one big difference….this one works…every time!

It could hardly be easier or any more simple.  When you add the eggs to the water, BEFORE you bring them to a boil, add a lemon cut in half to the water and then boil as you normally would.  We don’t have the scientific reason why it works, but we have tried it 4 times in the last few days with as few as 2 eggs and as many as 12 at a time and it works every time.  We even tried it using eggs from the same carton but boiled some with the lemon and some without.  The eggs that were boiled without the lemon had shells that stuck to the whites.  They didn’t stick to those boiled with the lemon.  We also tried adding the lemon to the water after the eggs were cooked but while they were cooling and found doing it that way didn’t work either.

So there is something about boiling the lemon along with the egg that must release something that causes the shell to easily detach from the egg.

      I was so excited to find this! I have had so many eggs with stuck shells over the years that I was thrilled to have this work again and again and again every time I tried it. Happy egg boiling Leah 🙂

    I have been using a technique I heard on the radio a few weeks ago and it has been very successful. Use a glass glass with a little water in it, an inch or so. Put the egg in the glass, seal the top of the glass with your hand and shake vigorously. Remove the egg and peel. It has been working quite well for me. It’s worth a try :). I’m sure the lemon works too.
