3G’s – Good, Garlicky, Gluten-free
Recently we have had reason to be more interested in tasty gluten free dishes. Both of your Two Chums have family members who can no longer tolerate foods with gluten in them. And when one comes to this place it is surprising, to say the least, even shocking, to find out how many things contain gluten. Gluten is a protein which is found in some grains. But it is also present in unexpected places. Many products have additives that also contain gluten, so it turns up in things like some brands of toothpaste and certain shampoos, for instance.
Some people now are finding it hard to tolerate gluten, to digest foods that contain it. Then, there are some for whom, it is more than a digestive irritant…if someone has celiac disease, even a bite or a crumb of something with gluten can be down right dangerous. So moving forward we will be giving you some recipes that are gluten free, but still delicious whether you are avoiding gluten or not. Today is one of those recipes. This is a really yummy garlic flat bread that has simple ingredients and is easy to make. Even if gluten isn’t a problem for you or someone in your family this is a recipe you will want to have and will use over and over. It is great to serve a slice alongside soups or salads, or as an appetizer to dip in marinara or pesto sauce. Give it a try. We think you will be very glad you did.
Gluten Free Garlic Bread
(This recipe is a modified version of a recipe from www.delish.com)
2 tbsp. cream cheese
1 cup shredded mozzarella cheese
1/2 cup finely ground almond flour
1 tablespoon garlic powder
1 tsp. baking powder
Pinch of salt and pepper
1 egg
1 tablespoon of melted ghee
1 minced clove of garlic
1 tablespoon Italian seasoning
2 tablespoons fresh grated Parmesan cheese
Preheat oven to 400 degrees. Line a baking sheet with parchment paper or spray the baking sheet with baking spray. In a bowl add the cream cheese, mozzarella cheese, almond flour, garlic powder, baking powder and salt and pepper. Microwave the mixture for 30 seconds – 1 minute, or until the cheeses melt. Alternatively, you can place the bowl over a pan of boiling water and heat until the cheese melts.
Once cheese is melted stir the mixture together. As it starts to cool add the egg and beat until it is incorporated. Turn the mixture out on to the baking sheet. Dampen your hands and flatten out the young until it is about 1/2″ thick.
In another small bowl mix ghee, the minced garlic and spices and brush over the top of the dough. Sprinkle with the Parmesan cheese. Bake for 15 minutes. Slice and serve. YUM!
