Carrots For Easter


Most people think of eggs and bunnies when they think of decorating, or preparing food for Easter.  Today we’ve got some fun ways to use carrots as well.  While two of these are not all technically carrots, they are meant to simulate them.  Here are three ways to incorporate the ordinary “carrot” in your Easter celebration:

What a fun way to use a bunch of orange tulips (either fresh or silk), some fern, and a bit of green ribbon to make a beautiful front door decoration.

This fun “carrot” is actually a cheese ball that can be used as an appetizer at your Easter gathering or be taken to the home where you are a guest for Easter.  There are actually no carrots involved, unless you want to use some baby carrots to dip into this yummy cheese spread/dip.  Who wouldn’t love to serve this!

“Carrot” Cheese Spread

2 pkgs. (8 oz. each) of cream cheese, room temperature
3/4 lb. sharp cheddar cheese, finely grated
1 tablespoon hot sauce
1 teaspoon Worchestershire sauce
1 teaspoon Italian seasoning
1 bunch of Italian parsley for garnish (keep 1 tablespoon of leaves to chop finely)

Beat the cream cheese until smooth.  Using room temp cream cheese makes this MUCH easier.  Add the hot sauce, Worchestershire sauce, Italian seasoning, and chopped parsley to cream cheese and beat again.  Lastly add 1/2 pound of finely grated cheddar cheese and beat together until smooth.

Shape on a plate to resemble a carrot.  If the cheese is too soft refrigerate for 30 minutes to allow it to firm up.  Add parsley with stems to the top of the cheese “carrot” to resemble the carrot leaves.  Use the remaining 1/4 lb. of grated cheese to top the cheese spread.  Serve with crackers or small toasts.

 

While it isn’t necessary to make a cake in the shape of a lamb as this one is, this is our favorite carrot cake recipe  from a post we did a few years ago.  You just can’t go wrong with this one!

Use some carrots at your Easter celebration.  You’ll be glad you did.  And however you celebrate, remember what the day is really all about….God’s amazing forgiveness and our ability to start again renewed.  We all need that 🙂
