THIS one is healthy!
Your Two Cbums spent a wonderful evening at dear friends’ welcoming in the new year. It was a sweet evening – lots of grazing through wonderful appetizers and desserts!
One of the appetizers we took was a veggie dip and someone suggested we put it on our website so, here it is! I must say, it is one of our favorites and came from our chum, Kristin, years ago. Kristin, we are still making it and enjoying it and others are loving it too!
So, this is what we call “Kristin’s Dip”:
16 oz sour cream
2 oz (or more) diced pimento
10 oz can of artichoke hearts, cut up (not marinated) (recipe calls for 4 oz but we put the whole can in)
small can water chestnuts (diced)
10 oz pack of frozen, chopped spinach (drain or squeeze out all the liquid well before using)
1 packet of Hidden Valley Ranch Original mix
Mix all ingredients together. This is best made the night before and put in the fridge but certainly CAN be served right after you make it.
We usually cut out a round loaf of bread and put the dip into the round. We then serve the bread that we have cut out with it as well as lots of veggies – any veggies you like….green, red and yellow peppers, celery, mushrooms, carrots, cherry tomatoes, cauliflower, broccoli, cucumber, zucchini, and on and on!
You might be surprised just how many people comment on this yummy dip. It really is delicious!
