Simple Pleasures – Flaky Buttermilk Biscuits

We all know there are some things in life that, though they are simple, bring us great pleasure.  These might be activities we can do with our children, fun crafts for our homes, or, like today’s post, something delicious to eat.  Often times those yummy things we love to eat are what we call comfort foods.  Though not always simple, these biscuits are really simple.  And who doesn’t love the comfort of a Flaky Buttermilk Biscuit?
These are quick and delicious and, well,…. simple!  Enjoy them at breakfast, slathered with some Kerrygold butter and honey or strawberry jam, or for dinner with some hearty soup.  Or all by themselves as a snack.

For that sense of joy and abundant living, there really isn’t a wrong time to have some Flaky Buttermilk Biscuits!

There are three things that you need to remember for making the best biscuits.

1. Handle the dough as little as possible as the warmth of your hands will melt the butter before the biscuits are cooked
2. Never twist the biscuit cutter when cutting out your dough as twisting will seal the edges of the dough and keep the biscuits from rising as hight as they should.
3.  Place the cut biscuits on the baking sheet as close as possible without actually touching

Remember these “rules” and you will have perfect and delicious biscuits every time!

Flaky Buttermilk Biscuits

2 cups flour
1/2 teaspoon baking soda
1 tablespoon baking powder
1 teaspoon salt
6 tablespoons butter
1 cup buttermilk
2 tablespoons melted butter

Sift dry ingredients together.  Cut in the butter until the mixture looks like coarse meal.  Making a “well” in the center of the flour mixture, add the buttermilk and then stir just to moisten the flour.  The mixture will still be a bit crumbly.  Turn out on a floured surface and knead very slightly and quickly until dough comes together.  Roll out to 3/4 inch thickness.  Cut with biscuit cutter and place on baking sheet.  Bake in a preheated 425 degree oven for 10-12 minutes or until golden brown.  Brush the tops of the biscuits with melted butter and serve immediately. Yum!

  2. These are our go to biscuits. They are quick and easy and oh so good. I skip rolling them out and just plop down somewhat equal mounds on my cookie sheet. They aren’t as pretty, but when we are having our family dinners no one seems to mind. The kids always want more.
