Salad Days – Green Salad With Roasted Strawberries
Today we have yet another recipe for a delicious salad with strawberries used in a more unusual way….roasted. This is simple and if you add chicken can be a main course salad but it is also perfect as is served as a side salad. The strawberries add brightness both in taste and in color. This one is a crowd pleaser. Try it this weekend, we think you’ll agree 🙂
Green Salad With Roasted Strawberries
1 head romaine lettuce, trimmed and chopped (or use baby spinach)
1 lb. of strawberries, about 2 cups, sliced
2 Tablespoons brown sugar
2 Tablespoons balsamic vinegar
3 oz. goat cheese
1 cup pecans or almonds
1/2 cup dried cranberries
Slice strawberries and sprinkle with brown sugar, then drizzle with balsamic vinegar. Stir lightly just to coat the sliced berries. Turn out onto a parchment paper, or silpat lined, baking sheet. Roast in a preheated 375 degree oven for 15-20 minutes. Cool completely. Add strawberries and juice to lettuce. Also add goat cheese slightly crumbled, pecans, and cranberries. Toss with vinaigrette and ENJOY!!!
Balsamic Vinaigrette
1/2 cup sunflower seed oil
1/4 cup balsamic vinegar
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon black pepper
Blend and store unused dressing in a sealed jar.
