Salad Days – Chopped Salad With Shrimp
Summer may be coming to an end soon, but the desire for a great salad is strong in any season …No one seems to have told the weather that it’s time to start cooling down, so a delicious, refreshing salad, could be just the thing for your weekend menu. You can make this one and serve it with some crusty French bread, and some tasty sangria and voila!…dinner is served.

From the first moment she came into our lives we were blessed with her determination, her strong sense of loyalty and her passion for those important to her. Chopped Salad With Shrimp
Lettuce (Iceberg works best for this salad)
Tomatoes
Cucumber
Yellow Pepper
Hearts of Palm
Watercress
Avocado
Shrimp, cooked, peeled and chilled
Chop all ingredients and toss with dressing being careful not to drowned the salad in dressing. Serve immediately.
Dressing
1/4 cup freshly squeezed lemon juice
3/4 cup safflower or grape seed oil
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons sugar
1 tablespoon dijon mustard
Mix all ingredients in the blender until smooth and use immediately on salad.
