Chocolate Peanut Butter Cupcakes
One of life’s all time best combinations is chocolate and peanut butter. I bet we have your attention now! So today we have a very simple recipe for chocolate peanut butter cupcakes. This being Friday, and all, we thought you might have need of a treat sometime this weekend and these will surely do the trick 🙂 Just ask Sadie Rae, my granddaughter who made these for one of our weekly family dinners. Chocolate Peanut Butter Cupcakes
Chocolate cake recipe **
Peanut Butter Frosting*
Chocolate chips
Peanut Butter Frosting
1 cup room temperature butter
1 cup peanut butter
1 pound powdered sugar
3 tablespoons milk or cream
1 tablespoon vanilla
Beat the butter and peanut butter together to thoroughly blend. Sift sugar and add to butter mixture along with cream or milk and vanilla. Beat until smooth. (Try not to eat too much before frosting the cupcakes)
Make the cake batter and spoon into cupcake wrappers in a muffin/cupcake pan. Bake for 18 minutes or until a toothpick inserted into the center of the cupcakes comes out clean but cupcakes still look moist. They will firm up more as they cool. (Be careful not to over bake and end up with dry cupcakes.) slow to cool for about 5 minutes then remove the cupcakes from the tin and cool completely.
While they are cooling, make the frosting. Pipe or spread frosting on each cupcake and then sprinkle with semi sweet chocolate chips. YUM!
** Reduce boiling water to only 1 cup for cupcakes
