Chinese Garlic Noodles
Chinese New Year is Monday. Need something easy and yummy to make for your celebration? We’ve got that! These noodles are quick to make and will be a favorite with adults and children alike. And they are versatile. We’ve made and served them simply. They can be served as they are here but you can easily add vegetables or chicken or shrimp if you choose.
Chinese Garlic Noodles
1 lb. spaghetti or Chinese egg noodles
1/4 cup peanut oil or safflower oil
1/4 soy sauce
2 tablespoons toasted sesame oil
1/4 cup sweet miring (rice wine) or rice vinegar*
4 cloves of garlic very finely minced
2 tablespoons grated fresh ginger
2 tablespoons honey
a dash of chile oil or red pepper flakes, optional if you like a bit of heat
1 bunch green onions chopped, reserve 1 handful for garnish
cilantro for garnish
chopped peanuts for garnish
Cook the noodles in boiling salted water to al dente, just very slightly underdone. While the noodles are cooking, place peanut oil,soy sauce, sesame oil, mirin or vinegar (if using vinegar add 1 tablespoon sugar), garlic, ginger, honey and green onions. Stir together over medium flame. When noodles are done, drain, and immediately add to the pan with the sauce. Toss to completely coat the noodles in the sauce. Serve immediately topped with green onion, cilantro and peanuts as garnish.
