Cake Pops

When it comes to birthday celebrations, nothing seems more fun than pretty cake pops! These were the hit of Robin’s granddaughter’s 1st birthday party. Both children and adults love them because they are easy to eat and oh so yummy. Cake pops are round bits of deliciousness because they are the cake and icing mixed all together and then formed into a ball.

You can use any kind of cake and icing that suits you.  They are then put on small wooden sticks and dipped in white chocolate.  Some of them were tinted pale pink and all had little sugar pearls added for decoration.  The finishing touch was displaying them in a bed of carnations….yes carnations.  Some people mistakenly think they hate carnations and that they are only good in funeral arrangements or as cheap boutonnieres, but au contraire!  Your Chums LOVE carnations and use them in a variety of ways, this was just one of them.  How could you dislike anything that looks as pretty as this?

Method for Assembly

Use 2/3 cake to 1/3 icing.  Crumble cake into the icing and mix together well.  Using your hands form the cake/icing mixture into balls about the size of walnuts or a bit larger if you prefer.  Add wooden sticks at this point in process.  Place balls in the freezer on a cookie sheet lined with waxed paper.  Just before removing cake pops from the freezer, melt white chocolate chips over a very low flame in a saucepan stirring constantly so as not to burn chocolate.  (You can use semi-sweet chocolate for this step if you prefer but obviously your cake pops won’t be pastel in color this way).  Remove the cake pops from the freezer when they are good and solid, 2 hours minimum or up to 24 hours.  Holding the stick dip the cake pops in the melted chocolate.

If you want to tint the white chocolate pale pink, add a tiny bit of pink food coloring at a time to achieve desired color.  The white chocolate will harden very quickly on the frozen cake pops so swirl the chocolate completely and add the sugar pearls right away.  You will get better and better as you go along and develop a rhythm.  Have fun and remember to save one of these yummy treats for yourself!
